    Vegetable suggestions please

    Primal Fuel
I find myself eating the same vegetables all the time and I'm sure there are others I should try out! This has been a problem for years not just since going primal. In a normal day I will have the following:

    Peppers
    Cabbage
    Avocado
    Mushrooms
    Spinach
    Kale
    Lettuce
    Carrots
    Broccoli
    Cauliflower
    Courgette
    Parsnips/Sweet Potato (small amount)
    Onions

I wish I could get that much variety into myself in a day. :) Diced celery, sliced daikon or red radishes, cucumber, and sprouts make great salad mix-ins if you want to try them out.

Walking around a market that has a good produce section is a good idea. I often pick up things that look interesting or are on sale. Another idea is to look over some recipes that have ingredients you haven't tried yet and then go shopping.

Sorry forgot to add Cabbage to the list. I know some vegetables are better than others for instance isn't aubergine a no no on PB?

Beets, fennel, asparagus, other greens (turnip or beet greens, collards, chard), bok choy (or baby bok choy), leeks, shallots, scallions, turnips, endive... I'm sure if I sat here longer I could come up with more (it's like a game!) but I need to go do some work. =]

I'm a big fan of leeks, fried up with portobello mushrooms, in an omelette, in soup. Lessee, some of my favorites are... bok choy, asparagus (cooked in a bit of butter and white wine), brussels sprouts (cooked in bacon grease, naturally), broccoli rabe, and there's the whole world of leafy greens in addition to kale, like collards, turnip greens, beet greens, chard, mustard greens (spicy!). My favorite excessive salad additions are jicama, artichoke hearts, and hearts of palm. I also like to snip generous portions of fresh herbs into my salads, particularly dill and parsley. If I just want something crunchy, I'll slice up some jicama and splash some Ume (pickled plum) vinegar on, way better than salt and vinegar potato chips.

There's also some veggies I keep meaning to try, like fennel and chayote.
