    I made this for lunch today - it was delicious!


    Three-Green Primal Chicken Salad


    Salad:

    2 cups grilled chicken, chopped

    2 cups cauliflower, diced

    1 cup baby arugula

    1 cup romaine lettuce, chopped

    1 cup spinach, chopped

    1/4 cup green onion, chopped

    2 TB chopped fresh Italian parsley


    Combine all ingredients in large bowl.


    Dressing:

    1/2 cup extra virgin olive oil

    3 cloves garlic, minced

    2 tsp black pepper

    1 tsp crushed red pepper

    3 TB red wine vinegar

    1 TB Dijon mustard


    Shake together in covered jar until well emulsified. Toss with salad. Serve immediately.


    Serves 2.

    sounds great. You know what would put this over the top --- my latest obsession -- add some fesh basil to the greens. A little goes a long way but really kicks a salad up a notch.
