Steelhead Trout with Asian Garnish
Ingredients
minced garlic
onion
olive oil
ginger
soy sauce
Steelhead trout (1/2 lb minimum per person)
Directions (serves 2)
To make garnish :
Chop up 1 large onion and heat it with 2 Tablespoons minced garlic in a large skillet in 2 Tablespoons olive oil over medium heat, uncovered, until soft, clear, and starting to carmelize (turn brown); takes about 10 minutes. Next add 2 Tablespoons ginger and 2 Tablespoons soy sauce, and reduce the heat slightly to medium low. Mix well and continue to heat the garnish for 5 more minutes.
To make trout :
After garnish is done, spread it out flat in the skillet and place the trout fillets on top of garnish and cover. Cook the trout over low-medium heat until flaky and pale pink all the way through (about 5-6 minutes per side). Serve the fillets with the garnish on top.
