I love you for posting this.
What would you suggest I use in place of the chia seeds?
this can be as light or filling as you want depending on your choice of milk or mylks. optional add ins can be raisins, other spice combos or raw chopped almonds. this really tastes like pumpkin pie too, i just made this today! enjoy it grok/grokettes

Thanks for posting this!
you don't really "need" the chia, i just think the gel is kinda fun. you can add some ground flax or 1/2 frozen nanner, really whatever you want. i think some chopped almonds, cashews, or macas would work well in this case too. i knew a family that would put pecans on their pumpkin pie!
I make something similar to this (pumpkin and cinnamon... I also add carrots) with coconut milk... soooo good!

Oh yum - this looks amazing! We don't have the pumpkin pie tradition over here in oz, but I certainly enjoyed thanksgiving when I was visiting the states... Will definitely be giving it a go :-)
I wonder if you could make this into a green smoothie w/out destroying the taste. It sounds divine!!![]()
I remember listening to a Dr Robert Su (Carbohydrates Can Kill) podcast and he mentioned that his blood glucose shot way up after eating some pumpkin.
Otherwise, it sounds delicious!
