    Is almond milk worth the trouble of making yourself or is the unsweetened refrigerated (or boxed) versions at the store ok? From all the reading I have done, it seems to only keep 2 or 3 days if you make it yourself. Any specific brand recommendations would be stellar as well. Thanks!

    I'm not into store-boxed anything if I can help it, so for that reason home-made wins hands down.
    True it only keeps about 3 days. And it does not keep well in old wine bottles, fyi....
    For a while it felt like my whole life revolved around making almond milk, until I stopped drinking it so often, but making it from scratch is not that messy or time consuming, at least compared to soy milk (which I don't make/drink anymore).

    nuts have enzyme inhibitors so i'd soak the nuts myself then make 'milk'. i tend to stay away from 'em for this reason and the fact that they are high in omega 6. don't waste your money!

    Perhaps I should just stick to coconut milk (though with it getting colder, I will be making no-atmeal probably every day and it calls for almond milk) because I'm not down with all that work every 3 days.

    Buy it from the store. It's fairly cheap (unless you're drinking a lot of it) and it keeps for up to 10 days in my fridge without going bad.

    Mark SUPPORTS Store Bought Almond Milk by default. I have searched his blog for anything definitive saying Yea or Nay on Almond Milk and can't find his stand. The best I can find are his 2 recipes that specify Almond Milk as ingredients:

    i use the boxed stuff for things like smoothies (usually do half coconut milk - half almond milk) & in my coffee, but otherwise, it's not so great. definitely go with the unsweetened stuff - the unfridgerated version of almond breeze has only 2g of carbs, but does have soy lecithin, which isn't so great. i wouldn't use it as an alternative to milk in most recipes. i've not tried making it myself.
