Baked avocado with smoked haddock
Simple but lovely avocado recipe.
Needs about 6 ounces smoked haddock, 4 ounces grated strong cheddar, 2 avocado (should have mentioned them first!) and some thick double cream. Black pepper fresh ground.
Cut avocados in half and remove the stone. Flake the haddock (remove bones and skin but don't bother cooking). Stuff the holes in the avocados with the fish, mix the grated cheese with the cream to make a thick but easily spooned "sauce".
Prop the avocado dishes up on a oven proof tray - pyrex is good. Spoon the cream and cheese over, trying to keep it on the avocado! , drizzle with pepper, and bake in an oven heated to about 180° C for about 10 / 15 minutes - the cheese and cream will be bubbling.
The avocado needs to be soft enough to get the stone out but is best fairly firm or it can get positively squashy in the oven!
