    what do you do with artichokes? I've never cooked one and have only eaten them in dips...but I'm curious!

    MMMMmmmmmmmm, SO good!!!

    I steam them, then eat them with melted butter.
    Or chill them, and serve them with Green Goddess dressing.
    Mmmmmmmm.

    The artichokes you have had in dips, on pizza, etc are the very center of the actual vegetable. So eating a whole artichoke is a different experience, you almost have to have a personal coach.

    I understand that a vegetable the requires TWO instructional videos may be a little scarey, but if you like them it is worth it!

    This was one of the special treats of my childhood. I may need to buy some this weekend. Yum!
    Started PB late 2008, lost 50 lbs by late 2009. Have been plateaued, but that thing may just be biting the dust: more on that later.

    Be prepared to turn yellow-brown if you start cutting them raw. I find it much easier to simply steam them whole and be careful when I'm tearing them apart than snip them all up first. Butter with a little lemon juice or mayo are pretty standard dippers. I almost grabbed a few the other day, but I'm guessing there's simply no way I could convince either of my kids to eat one.

    Has anyone cooked and eaten a Violetto artichoke? Supposedly Italians consider it a gourmet type. The artichokes are smaller. I grew the plant with enjoyment (it's BIG, and if you don't get the artichokes picked the flowers are incredible! Plus they bring a cloud of bees.) But I never managed to figure out how I should process them.

    I love the artichokes in olive oil you get in jars. I think the Italians use it as part of antipasto.
    Type 1 diabetic for 25 years.
