Here's another one dish meal that I really like...

Chicken thighs or breast, cut into bite sized pieces;

saute in a skillet with bacon grease along with the following spices (I usually mix all the spices together in a bowl so I can sprinkle it all together):

garlic powder

onion powder

black pepper


cayenne pepper

chili powder

sea salt


Once chicken is cooked, add sliced andouille sausage and saute another minute. Then add:

chopped onion

chopped green bell pepper

frozen chopped okra

grated cauliflower (I fond that the "chop" function on my blender works if you don't have a food processor or grater)

cook until all veggies are tender, then add:

a few chopped roma tomatoes

the green part of a few scallions

stir it all up and remove from heat, then serve
