I thought I'd start a thread where people can post what awesome dishes they've made.
Here's my most recent dish - NC Grouper with a homemade roasted tomato salsa with peppers. Roasted Eggplant and heirloom tomatoes with farmers cheese.

Oh, wow! That looks great! The colors make it look even more appetizing.
Haha yeah, it's grouper not chicken - was very delicious. I topped it off the next night with some Black Sea Bass wrapped in Fig leaves, Sea Salt and Olive Oil - 18 minutes, 9 minutes per side in the Big Green Egg. Oh man was it delicious. Living in NC, I'm also a huge fan of Pork - especially heritage bred hogs fed a diet of 'whey'. I love Chapel Hill Creamery, they have like 0 waste.
