More Thanksgiving stuff is happening in our kitchen, in preparation for the big day. We did a test run of this naturally sweetened cranberry sauce yesterday - turned out great! We used 1lb of fresh cranberries, 1 cup of freshly squeezed OJ, and 1 tsp stevia extract. These had the perfect balance of sweetness and tartness (not too sweet). One recipe closer to a full thanksgiving meal!

I made crackers - from the Cauliflower Pizza Dough recipe -
First I baked them in my muffin topper pans (made 10). Then, after 15 minutes, I took them out of the oven, flipped them over onto silpat sheets and placed them back in the oven for 10 more minutes. Here's what that looked like:
Finally, after I took them out of the oven, I put them in the center of my food dehydrator trays (I was also dehydrating apples at the time), and dehydrated the 'crackers' for 20 hours. They came out very crisp and made great dippers.
The next time I make them, I'll make them smaller. Initially I was thinking buns, and the size I made would make good buns. I'm planning to drop the dough by tablespoons and flatten into roundish shapes. Pretty sure I'll have to reduce the baking time and then flip them over. The flipping helps cook the underside and centers.

Can't find the recipe for Cauliflower Pizza right now, but used 2 cups each shredded cauliflower and mozzarella cheese, 1 egg, 1/4 cup coconut milk and 1/4 cup water. Seasoning mixed in: 1 tsp. garlic granules, minced onion, cumin, and 1/2 tsp cayenne pepper
Tonight's crackers used the rest of the cauliflower and cheese, 1 egg and 1/2 cup yogurt, 1 tsp garlic, onion power, and dried diced pepers. Dropped by tablespoons on silpat sheets, baked for 10 minutes and then flipped for 7 more minutes before going into the dehydrator overnight.

Well, I was wondering what I should make for our friend's Thanksgiving party. That cranberry sauce looks amazing.
Where should I buy the raw cranberries?
Most grocery stores will start carrying raw cranberries around this time of year if they haven't been already. Just make sure the package reads "ingredients: cranberries" and nothing elseWe have a bunch of other thanksgiving dishes on our blog too, if you're interested!
Haha, already put your blog in my RSS feeds. The carrot souffle is something that I remembered was my favorite when I was a foster child. I cannot wait to get on that!
