    Cool bragging about tasty chili

    I just hadto share about something I cooked for myself that turned out fantastically!!
    Chili.
    Ingredients:
    1/2 pound grass-fed beef
    1/2 pound anti-biotic and hormone free chorizo
    2T bacon fat
    14 ounce can of tomatoes, with juice, chopped
    medium sized yellow onion
    half a carrot I had lying around
    6 roasted hatch chili peppers
    spices (coriander, chili, cumin, oregano, black pepper and red pepper flakes, I think) (maybe some cloves)

    I browned the meats in the bacon fat (though they didn't really need it, being fatty enough all alone). Then, added the onion, while the meat was still browning, then the carrot chips.
    Once the onions were pretty much cooked and the meat browned, I poured in the tomatoes and the chopped hatch chilis, plus the spices, stirred it up and simmered for an hour.

    mmmmmm....who needs beans?
    I served myself about a third of it for lunch yesterday, and barely wanted dinner, though I had been fasting through breakfast.
    breakdown (approx, of course) per serving:
    calories: 930
    protein: 60g
    fat: 66g
    carbs: 23

    sounds good, thanks for the recipe. might need to try this one out. I've got a chili cook-off coming up with some friends...who will most definitely be using beans and the typical fare...but I was thinking about doing more of a wild game chili...and sans the beans as you went with

    i used to do my chili with black beans, garbanzos, corn, bell peppers, onions, and garlic. since going primal i've switched the recipe to pretty much any and all veggies i have around the house. cabbage, squash, zucchini, mushrooms, onions, bell peppers and garlic. last time i used a combo of grass fed beef with pastured country sausage. was yummo and makes enough to have for several lunches, a couple dinner, with some to spare for freezing.

    I like the idea of using chorizo in chili, never thought of that! I'll have to see if I can find any without undesirable ingredients.

    You know what's awesome w/ that kind of chili - eggs. Put the chili in a pan to heat it up, make some wells and put eggs in there. Cover, cook until yolks are desired doneness. Soooooo goood. <3 Chili w/o beans now, especially as a bed for eggs.

    Tomatoes in chili? That's not chili! j/k I have issues for tomatoes, so this has become my official chili: http://www.lifewithouttomatoes.com/2.../02/red-chili/ minus the corn starch and flour. However, your recipe looks delicious.

    I was looking for a substitute for pasta to serve my chili on, (used to adore that in my pre-primal days). I tried a nice batch of scrambled eggs ... YUM! I am putting some grass fed beef stew chunks in the crock pot tonight to make a pot of chili. That's what I use instead of ground beef. Very tasty!
