Fire Roasted Tomato-Basil Bisque
Here's a quick soup you can whip up when you're really short on time.
2 cans organic, fire roasted tomatoes
1 stick butter
2 tsp onion powder
3 tsp basil leaves
1 cup chicken stock (homemade is best)
1 cup heavy cream (raw or organic if you can find it)
1/3 cup full fat whipped cream cheese (organic if you can find it)
Puree tomatoes in a blender. Pour in large pot. Add chicken stock, butter, onion powder and basil leaves. Simmer until butter is completely melted. Add heavy cream and cream cheese. Simmer on low until cream cheese is melted. Serve.
