    Red face chicken in bacon grease

    Tonight I was going to grill up some chicken breasts only to discover we were out of propane. So I decided to cook them in a sautee' pan in some bacon grease. Smashing success!!!! The chicken fried to a beautiful golden brown and the crumblies left in the pan were delicious in the salad.

    Just wanted to share!

    I save my bacon fat everytime I cook it and keep it in the fridge. I'll use it for frying up sausages, making chili and stews, and seering meats. It's awesome and adds so much flavour!

    Primalk@, should I refrigerate it?? I save it when cooking too, and I keep it in an old almond butter jar right by the stove because I use it so much. It's usually gone within 2 days but still...

    If you use it often there is really no need to refrigerate.

    The bacon fat is a saturated fat, which by definition resists oxidation (going rancid). The only thing is that there could be "contaminants" (pieces of meat) still in the fat. It is pretty low risk, but since I never empty my stash (I just keep adding newly recovered to the older stuff) I keep mine in the refrigerator.

    I actually do keep it in the refrigerator. I agree with Steve1907, I keep adding to the layers of fat everytime I cook bacon and little bits of meat do end up in there (extra yummy flavours). There is the possibility of it going rancid, so the fridge is your safest bet.
