    I'd say that it's not fantastic food - all gluten free products like those fall into that category, really - but that it probably won't harm you. If you're sensitive to gluten it'd be a much better choice than a piece of regular bread. I know several people who managed to reap some fairly major benefits by simply ditching gluten but not ditching all grains, and it's hard to argue with real world results.

    xantham gum isn't that bad for you, better than corn starch for a thickener.
