Does anyone eat any cured meats?
If so whats the best choices.
IM not positive but I believe that most cured meats are done by factory methods these days so nitrites/nitrates/salt/or some of the same stuff that is in some red wines. I think I would be very careful on cured meats. SHould you be in a position to purchase form a farmer or local producer that does a small production run and is available to chat with then you have an opening to shop wisely. JMHO...Chas

I can get Parma ham that is 100% pork cured in salt. Nothing else..i think its a safe bet as i dont mind a bit of salt.
