Goma wakame, seaweed salad
2 cups of wakame stems (you can buy bags of it in an asian market.)
3 tablespoons vinegar (should be rice but white will do)
1 1/2 tablespoons sugar (you can opt out or use stevia, splenda etc)
1-2 tablespoon soy sauce (you can use wheat free tamari)
1/2 tsp sesame oil
Red chile (to taste)
Garnish with sesame seeds (toasted or untoasted is up too you)
I have seen recipes with a bit of ginger and some with garilc so if your interested just experiment. You can buy the wakame stems (salted seaweed stems) online if you don't have an asian market near you.
-You have to soak the wakame for 5-10 min then drain.
-Some people steam them and some people heat it up in a frying pan (on low so you don't brown it). I have only had mine cold.
-Mix remaining ingredients and pour over top YUM!

I'm glad I'm not the only one who loves this stuff.
Seaweed really rocks, it's such an easily overlooked food too! So incredibly nutritious. I add nori flakes as a seasoning instead of salt and add Irish seaweed mix into my seafood chowders with the shellfish and oily fish too it must be one of the most nutritious meals out there. If I get round to doing a blog post of the recipe I'll stick it up here.
Are there different kinds of wakame? I have some that I add to my miso soup and when hydrated, they are about 2" x 2". The ones in your salad are very thin strips. Do you buy them this way or do you slice them yourself?
I buy them in a bag that comes cut up like that.
