    Red face Indian Sweet Potato Pancakes

    If you want to try something different for breakfast, check out these Indian Sweet Potato Pancakes. No use of grains or nut flours. Super easy to make and tastes pretty awesome with a dollop of sour cream.


    Recipe adapted from Miss Dahlís Voluptuous Delights

    1 1/2 cups mashed sweet potato
    1 1/2 tsp curry powder
    1/2 tsp cinnamon
    1/4 tsp salt
    1 egg
    1 tbs ghee or more as needed
    sour cream to serve

    Mix the mashed sweet potatoes, curry powder, cinnamon and salt in a bowl.
    Heat a skillet over medium heat with the ghee.
    Drop the batter in the hot skillet and spread thinly and evenly.
    Lower heat and cook slowly. These are delicate so you canít rush it.
    When one side has been cooked, flip and cook the other side.
    Serve with a dollop of sour cream and a sprinkle of cinnamon.

    Makes 2 servings.

    Very nice! Funnily enough I did a little curry experiment for breakfast this morning too. I fried some onions and grated carrots (squeeze the excess juice out) in ghee. Then added some tandoori curry powder and let it all cook a bit more over a low heat. Then I added 3 whisked eggs to make it into an omelette/frittata. Tasted goood!
