    How do you eat your dark leafy greens? Slightly cooking is really provide better digestion than raw eating?

    Raw cruciferous vegetables have glucosinolates which break down during cooking

    Whichever tastes and settles better--mostly cooked for me:
    lettuce/mesclun = raw
    spinach = steam
    cabbage = sauté
    kale = roast
    collards = soup

    With the exceptions of lettuces and very rarely spinach, I always cook greens. And I have been known to cook lettuce too.

    Boiled - cabbage, broccoli, zucchini, cauliflower.
    Heated up in microwave - frozen spinach cubes.

    Depends on the greens...

    Kale - both raw and cooked
    Collards - cooked
    Swiss chard -cooked

    Lettuce of most varieties - raw
    Spinach - raw or cooked

    lettuce, cress and arugula i eat raw, but most other greens i prefer cooked, including spinach.
    As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy and to make plans.

    Lightly steamed for most, though I prefer leafy stuff raw most of the time.

    Yes, it is an acquired taste but I have grown to love it, cooked or raw.
