I am a bit of a bison nut and just finished reading "American Buffalo" by Steven Rinella. Heck I make jerky out of 3 lbs raw bison each week. In the back he has some links for various organizations that I explored including the National Bison Association. They have a US state by state and Canadian province guide of all their members who sell bison products. I am sure that there are other ranchers that are not members of the association as the vendor at my farmer's market is not listed. However, if you are looking to try some bison, this may be a good place to start to find a farmer.
