What do you think about fish gelatin?
I see many primal/paleo, traditional food bloggers are crazy about gelatin for its health benefits but also for baking. I'd like to get the same benefits but I'm a pescatarian so I was wondering if I could get the same benefits from a fish gelatin? I see a lot of kosher ones in supermarkets. Could I use one of those? Or is there a very good brand that I should look out for/order online? Thanks
Fish gelatin seems to have a minorly different amino acid composition than mammal gelatin. But not too much, and there's no deficiency of the main amino acid people like in gelatin--glycine--so I see no problem in using fish gelatin.
