    Cheese "crackers"

    Primal Fuel
    I know very little dairy is here but as I am transitioning I found a cracker substitute. I took 2 slices of jarlsberg swiss and cut them into 4ths. Place the 8 pieces on parchment paper and nuke (yeah, I know the micro info too) for 1 minute or 1 min 20 sec on high. The cheese bubbles up and becomes crispy. Lifts right off the parchment. Lots of protein and some fat. No carbs.

    I do the same thing in the oven for about 6-8 minutes with cheddar jalapeno cheese. Yummy.

    I do it in the oven, too... I like using finely shredded cheese because the crackers/chips come out looking sort of lacy and pretty. =]

    I love these. I do em with leftover shredded cheddar. only problem is I eat em as fast as I can make em.

    I can see this being a problem for me also! When I first went primal cheese was my go to crutch, I was eating upwards of 3lbs a week of seriously sharp. YUMO!!! Then after 3-4 months I checked my cholesterol even though it still remained well within check it went up 20pts, so I cut way back on the cheese. Now I only eat it in omlete's, salad's and a ocassional snack.

    I make homemade pepper jack with fresh peppers and use the crackers for guacamole. About ten of those and some 2" squares of crispy bacon crackers and snack time has never been better. Now imagine stacking them. The cheese cracker dipped into the guac topped with a bacon cracker. Hah! Doritos schmoritos.

    I've made these by just frying shredded cheese in a pan, too. I keep meaning to make a tray worth at once in the oven... delicious.
