From what I understand, agave is VERY high in fructose = NOT good.
I've been using raw agave nectar every now and then when a recipe calls. But after reading this article from a raw purist, he seems to look down on it?

Started PB late 2008, lost 50 lbs by late 2009. Have been plateaued, but that thing may just be biting the dust: more on that later.
Would high fructose corn syrup be any more appealing if it were marketed as corn nectar? Same highly processed, high fructose unnatural and poisonous to the human body. Not even "in moderation" (whatever that means) is HFCS or Agave Syrup a decent "food".
AWWwww mannn. So much for Elanas pantry recipes. More than half of them call for agave. I will just do without.

Despite it's "pure and natural" reputation, agave nectar, much like industrial vegetable oils, is a new monstrosity created in factories utilizing some severe processing to extract the syrup. It gets touted as "healthy" because it has a negligible glycemic load. This is because it contains no glucose. What it has in spades is fructose, which is shunted to your liver to be metabolized like a poison, and is a prime suspect in creating chronically elevated insulin levels, turning the body into a fat-storing machine.

I actually love agave nectar providing it's slow roasted in stone ovens with the heart of the agave then crushed into a mash that's fermented and distilled before being aged in an oak barrel.![]()
