What is Your Favorite Liver
So, what is your favorite liver? Chicken? Cow? Other?
I want to try the first offal recipe but don't have chicken liver. I instead have cow liver since I just purchased 1/2 a cow. Someone said I should try chicken liver first since its milder.
What do you guys think? Thanks!

I agree chicken is the mildest and IMO the tastiest. My next fave would have to be lamb liver. I like to soak it in lemon juice too, to get rid of any "liver" taste

hands down, fresh venison liver. If i kill a deer then deer liver is on the menu that night. comparing it to store bought beef liver is like comparing a good t bone to a t bone that has been eaten and crapped out by a coyote. with any liver freshness is a HUGE issue.
if you want to good beef liver you have to find a butcher and find out the day he slaughters. get the liver and fix it THAT day. do NOT overcook. just fry in butter and make sure the inside is still just a bit bloody. it is very easy to overcook.

I bought a 1/2 cow that is 100% grass fed and have the liver from that. It is frozen. Will it still taste ok?

Italians have some good recipes for calves liver. My favourite is Fegato Veneziana. The liver should still be moist and pink
Lamb liver (lamb's fry) was a common dish as a child - liver pieces tossed in flour then shallow fried in lard. Not bad, even though my Mother habitually overcooked it. Should be able to just omit the flour

chicken liver is great! 'bread' it with almond flour. yummm...

dosenberry, i have no experience with grass fed so i do not know. freezing it definately has (in my opinion) a negative affect in texture. I am sure it has to do wiht the freezing breaking cell membranes. Organ meat is definately a matter of taste. biggest thing is not to overcook it.
the last time I had venison liver my kids where 1 and 3 and they loved it. even got a 5 yo guest to try it and really like it.

mmm yum yum yum i love livers theyre my favorite food ever!!!!!!!!!!!!! i have had cow and chicken, both raw and cooked, love both ways

Definitely pig liver, cooked al dente with ginger, dark soy sauce and spring onions.... YUMMMMMM...

I don't like chicken liver, but grass fed beef liver raw is great!
