If money isn't a problem you can buy a mini fridge that plugs into your cigarette lighter space.
Here is the secret of automobile travel. Try to make enough time for rest stops. Two hours of driving time, then take a break, a car traveling with young children a good pattern. Also contain: a small cooler of cold drinks, or insulated bags, plastic cups; bandaids.
Nuts and fruit would work, but you don't want to over do on them. Jerky is good, and some veggies, like carrots and celery keep well. I would hit a restaurant once a day where I could get a big steak and salad, and perhaps a breakfast place in the late morning. I think if I had the 2 restaurant meals, that would be probably all I would need, but if you have kids or need snacks, I'd try the ones I listed above.
