Yum! Here's my version.
Okay, I've just finished the last bit of this and I have to share the recipe. I've made this mousse several times now, and it gets better and better. I had a teeny bit left over from yesterday, so first I put a bit of cottage cheese in a teeny cup (think espresso), sweetened it a bit with maple syrup, topped it with the chocolate mousse and finished it off with a dollop (small) of whipped cream sprinkled with chopped pecans. Tada. Chocolate cheesecake. I had to do this so as not to waste that last little bit.
But okay, here's the recipe and a photo of it from yesterday:
1/4 cup pure cocoa powder
1 tsp pure vanilla
1/4 coconut milk
sweetener of your choice to your taste (I use either honey or an erythritol/stevia mix.
Puree together and you're done. It's so creamy and you would never know it's because of the avocado.
