Since you said you use gluten free tamari I'll tell what we use. I'm not sure of the measurements we just toss it all in a ziplock bag and marinate for about 24 hrs.
Worcestershire Sauce (I think about 1/4 cup of each)
juice of 1 lime
about 1 tsp honey
sea salt (we like it salty)
If we aren't going to smoke it we add a little liquid smoke.
