Most of the organic carrots I buy come with a healthy bush of greens on top and frankly... I feel bad just tossing them.
I've done some Googling and there appears to be no consensus on whether they are actually good or bad for human consumption. Many places note that they're high in various vitamins and minerals but there are some that say they're mildly toxic... which has me a bit hesitant to eat them, I'd rather get my vitamins from something 100% non-toxic of course.
So if they are worth eating, anyone have suggestions as to how? I've tried them before raw on a salad but it was a bit much. I think they'd be best treated like parsley... I'm thinking adding them to stews or drying them as a spice.
