    Birthday Cake... no eggs or nuts

    Goodmorning,

    Im looking for a birthday cake recipe that is primal, egg free and nut free. Could one possibly exist? No not meat-cake.. hehe... don't think I could pass that off to my 2 and 4 year old as cake. lol.. Any ideas would be awesome. TIA

    Do you think any coconut/gluten free flour recipes could be modified by substituting bananas, avocados or apple sauce or something? I'm not great at baking, but that might be an idea.

    I would just do either a flourless chocolate cake, cheesecake with coconut flour crust (Coconut flour + coconut oil + dash baking powder+ sweetener), a coconut whipped cream "cake", ice cream cake, or gluten free cake.

    I chose the last option for my bday cake last year. There are plenty of vegan cake recipes (that you can make with gluten free flour) out there without eggs... It just doesn't taste as "fluffy." I made my cake gluten free and vegan because my friends are vegan. No flax "eggs" either. It was made with coconut oil/coconut milk. I whipped coconut cream + confectioners sugar + vanilla bean together for the frosting. The cake was very dense (no egg) but moist... Like a denser Italian cream cake texture.

    I gave up the hunt and made a pie for my daughter's birthday. Cherries, arrowroot, coconut flour, coconut oil, vanilla, and salt.

    TQP... do you have a recipe for your suggestions? they all sound delicious. Im not a great baker so a recipe would be great

    No, but the flourless chocolate cake recipe is wildly abundant online, and if you have a specific dessert you want to try out of that list I can be more specific.

    Crust:

    4 dates, soaked until very soft
    1 cup dried organic, unsweetened coconut
    Filling:

    2 1/2 cups young Thai coconut flesh (about 5 young coconuts)
    1/4 cup coconut water (from the coconuts)
    1/3 cup raw agave nectar or liquid sweetener of choice
    1 cup coconut oil, softened
    2 cups fresh pineapple chunks, separated

    Like this? I've never made it but I saw it on pintrest and saved it because it looked so awesome.

    This one is a chocolate macaroon pie that looks pretty tasty too.

    No egg is a toughie--the vegan binder is usually a ground chia gel but IME that's even harsher on the gut.

    One shortcut could be something like watermelon cake. Icing can be lightly sweetened (or not).
