Some cheese, but not a lot, and no batter or frying involved:
Roast some fresh poblanos on the grill for a while until lightly charred.
Cut then in half and remove the seed and, if you prefer, the skins.
I then put them in a baking pan and filled each half with a mixture of cilantro, beef, a little bit of cooked backon, cauliflower rice, sautéed onions and peppers, and some goat cheese. Add any veggies or spices you like - no rules at all.
Pour your favorite salsa over the top (I made a homemade tomatillo salsa for these) and bake until cooked through.
Top with homemade guacamole.
It's not the real thing, but it gets away from a filling of all fatty, processed cheese, and the flour-batter and deep frying.
And, they were pretty tasty. I'm finishing them off for lunch right now.
Will be trying this this weekend.
Even if you fall flat on your face, at least you're moving forward!
