    Question Thai deviled eggs - question

    So I am going to try an improvised Thai curry deviled egg type thing for a get together tomorrow. I was planning to do red curry paste, cilantro, and lime juice mixed with the yolks. I had an idea of replacing the mayo with coconut cream, but am not sure if that would just be nasty with egg yolks. Has anyone tried this? What do you guys think?

    One of my kids uses sour cream instead of mayonnaise. Tastes pretty good to me. I don't know if it is better than using real mayonnaise--the kind you whip up yourself--though.

    I don't have an issue with mayo, although I usually sub greek yogurt, I am more curious about the coconut cream, yolk flavor combo...

    I know a lot of people on the boards cook their eggs in coconut oil, if that helps...

    Ok, I tried it...and they were great! I ended up doing 1/2 greek yogurt 1/2 coconut cream, and they were a huge hit.
