    I just made the most delicious coconut pancakes ever. I feel like I am cheating everyday as I eat these! So so so much better than regular pancakes! Just wait till I get some 100% cacao powder... and some cinnamon and vanilla... and some raw honey maybe?



    Just wanted to share. It feels good eating like this again after being (depressively) carnivore for 2 months.

    Sure, that was 6 egg whites (or 4 whole eggs) + 4 T coconut flour, cooked in coconut oil. Topped with coconut milk.

    lol yep... I've been making primal pancakes for my kids regularly. Thismorning we went to Macdonalds... seems their pancakes are no longer the treat they once were! Mummy's are better!

    I made some with cocoa powder the other day, worked well.

    Had some coconut/almond pancakes stacked with some fantastic local farm cream, and a wee splash of organic maple syrup.
    They've been a weekend favorite for about a month now!!!

    1/4 cup coconut flour (or partial coconut/almond flour)
    1 egg
    1 tablespoon butter
    cooked in butter.

    Mmmm, I'll have to give those a try for my kids. I never liked pancakes myself but those look just like the real thing!

    Thanks so much for this awesome recipe. I just finished making these babys and instead of a banana,I topped them with 1/2 cup fresh warm blueberries..........FANTASTIC! I have not eaten anything like a pancake in almost 2 years due to being gluten intolerant....this will be a new staple meal for weekends!
