    OMG. I just made these for breakfast adding 1 T of coconut milk and 1 T melted kerrygold butter into the batter. I heated frozen blueberries till hot for a topping. I think these are better than regular pancakes.

    What type of coconut flour works best for these, the really ground up Bob's Red Mill kind, or the more shredded Let's Do Organic kind?

    I used the Let's Do Organic coconut flour. It's not the shredded kind, but the actual flour.
