    primal chili

    Primal Fuel
    I made a primal chili last night. It was the first I ever made without beans and grains. And it was so good. I didn't miss any of the CW ingredients I usually use. The flavor of the meat and the spices and the cocoa and the tomatoes made it so rich. I topped it with greek yogurt and shredded cheese and almost couldn't finish the one bowl.

    2 tbsp Butter
    2 tbsp Bacon grease
    1 onion, chopped
    1 red pepper, chopped
    3 jalapenos, chopped
    red pepper flakes
    2lb ground beef
    1lb pork sausage
    5 cloves of garlic
    3 chipotle peppers in adobo sauce, chopped
    Ancho chili powder
    Chili powder
    Cumin
    Coriander
    Paprika
    1 can of tomato paste
    1 28oz can of crushed tomatoes
    1 tbsp honey
    2 tbsp unsweetened cocoa powder
    1-2 cups of chicken stock

    Put butter and bacon grease in a stockpot over med high heat. Add chopped onions, jalapenos, red peppers. Sprinkle on salt and red pepper flakes. Cook until softened. Add in crushed garlic and the chipotle peppers. In a large saute pan, brown the beef and sausage. Season meat with Montreal steak seasoning or S&P. Put browned meat in stockpot. Add all spices and cook for a minute. Stir in tomato paste and cook for a minute before adding in the crushed tomatoes. Add honey and cocoa powder. Put in chicken stock as needed. Simmer on low for 1 hour.

    Thanks for this, I'm going improve my primal chilli with these suggestions.

    Yeah, this is going to be a sunday project for me. Looks awesome. Wife doesn't like the chipolte, but everything else looks awesome.
