Another Iron Chef Creation, from the House of Kuno ;-)

Tomato-Tarragon Chicken (serves one)

2 Chicken Thighs
1 Tomato, chopped
4-6 cloves Garlic, chopped
2-3 T. Fresh Tarragon, chopped
S&P to taste
2 T. Olive Oil
1 c. Water
1 T. Balsamic Vinegar

Brown Chicken in oil; add all other ingredients EXCEPT Vinegar.
Cover and simmer on low heat until Chicken is falling off the bone (about 40 minutes).
Remove Chicken to a serving bowl; add Vinegar to pan and increase heat. While stirring
constantly, reduce sauce until thickened (about ten minutes); pour over chicken. Serve with Cauliflower Rice.
