    Freezer Status & Recipe Ideas

    Primal Blueprint Expert Certification
    Decided to organize and take stock of the freezer this week. We made a decent dent in the contents. This was probably the fullest we have EVER had our freezer.

    My husband has a busy fall planned, so I need to get cracking on the last of this.

    Anyone have good recipes for pheasant or duck breasts? What about elk/deer shank meat? Usually I make osso bucco out of that, but I am a bit burned on that recipe this year (they are boneless).

    Meadow, do some Pheasant with a Coq au Vin recipe. Find a slow cooker method. Ah hell I got this memorized. Normal recipes use a little flour for the wine gravy, but wine au jus is better, so this dish is best flourless.

    2 cups pearl onion
    1 cup button mushroom
    4/5 cloves thin sliced garlic
    1 tsp dried thyme
    6-10 pheasant breasts
    1/2 cup dry red wine (chianti works)
    1/2 cup tomato puree
    4 slices bacon, cooked and cut into small pieces
    salt and pepper to taste

    layer everything in a crock pot in that order, cook on slow for 6-7 hours, last hour on high. Serve over riced cauliflower or zuke noodles.

    Thanks grol...that sounds good. Its been put on the menu for next week!
