I would argue against variety - as long as sources are complete. The gut and kidneys will quickly adapt to staple foods to maximize absorption and minimize loss or essential nutrients, minerals, etc. My Australian Shepherd (RIP) made to the age of 16 on basically corn meal (we didn't know better back then).
Steak, eggs, potatoes - fruits, nuts, berries and forage. Coconut milk and potent herbs and spices. Tea instead of coffee now and teeny amounts of kelp daily. Let's see how this does! Not really had dairy much, and gut seems better for it.
