    Glad to be helpful

I imagined GT was a brand, unfortunately it is not sold here, but I'll find something else (as long as it has living bacteria it should work, like with yogurt).

I make kimchi, coconut milk kefir, and preserved lemons and eat all 3 pretty much daily.

I do milk kefir, water kefir, beet kvass, saurkraut, dilled carrots, and yoghurt, ginger style of drink with turmeric and sometimes creme fraiche. My kitchen is a constant source of amazement to my friends/family with all my little bottles all over the place. They think I am like a mad scientist
I would like to do kombucha but I think I have enough 'pets' on the go already.

I love my homemade yogurt (24 hours ferment), but my body didn't so I switched to homemade sour cream (made exactly like the yogurt but with HWC which has much lower casein instead of milk). This also helps keep me regular (in the waste department). I make meyer lemon curd without any sweetener and mix it with my sour cream and freeze it for tart ice cream.

I also make sauerkraut with cabbage, adding carrots or beets in a mason jar on the counter for a week. I add leftover whey or sauerkraut juice to it when I have it, but it works fine with just salt. I put a ziplock Baggie full of water on top of the cabbage to weigh it down into the liquids. I love to throw it in the blender so I can just drink it.

These have been a major influence in my gut health, along with bone broth and/or gelatin.

Baby if you time travel back far enough you can avoid that work because the dust won't be there. You're too pretty to be working that hard.

I just had a look at the website and... wow. I think I'll spend some weekends trying to make most of those recipes!

i Live in Germany so good quality sauerkraut is just a 5 minute walk away, but I am wary of trying it. It sounds bloody awful. What does it go nice with?

Well, I do have to take off the hat, but i leave my cowgirl boots on!

FWIW, there's quite a large Asian population in the DFW area.
