Coconut Curry w/ Ground Beef
1 can coconut milk
1 Tbs red curry paste (+/- depending on how spicy you like it)
1 lb ground beef
Onion
Ginger
Veggies: I used cauliflower, carrot, broccoli, peas, & kohlrabi greens - use whatever you have
Thai or Vietnamese fish sauce (you could use tamari if you don't have fish sauce, but it gives the curry a more authentic flavor)
Other additions: lime juice, cilantro
Put 1/2 can of coconut milk in a large pot, add curry paste and break up. Add onion, cauliflower, carrot, and ginger. Add rest of coconut milk and water or broth if you want it more liquidy. Simmer. Lightly brown beef in a skillet (can be rare). Steam broccoli & kohlrabi greens separately. When cauliflower & carrots are tender, add all other veggies and beef. I didn't have lime juice or cilantro, but those would have made it even better!
EDIT: After making this many times, I have gotten lazier and skipped some steps with no adverse effects. I now add the ground beef raw, as well as all the veggies.

I am making this today.
I just made something along these lines, and it is amazing. Further, it's about the ideal primal meal, isn't it? Healthy veggies, good fatty meat, loads of coconut, and a range of spices. Thanks for the inspiration (found it in the ground beef recipe thread)!
