I believe at least one of the supermarkets does do jerky ( i want to say Morrisons), as it is, i happened to be eating some bought by a friend from cowleyfinefood.com

The cure I use for our bacon contains sugar but when you see how much is used you would not worry. It's 30g cure per kilo of bacon

Out of interest i bought the magnesium flakes (£10/1kg, also available online for about £7.50/1kg), i boiled 100ml water and dissolved 100g of flakes in it and put it in a spray bottle.

I have trained once a month for the last 18 months, and gained in strength each time. I have taken 2+ months off due to injury and did not lose strength. So I would agree, it shouldn't be like this...
