Sweet and Salty Beets and Salmon
Another really loved recipe of mine!
for 2 servings, or 1 really large serving
2 pieces of wild salmon
6 pieces of organic bacon
1 large onion, cut in rings
2 small red onions, or just 1 large (the type of onions doesn't matter really), cut in rings
1 red or yellow bell pepper, cut in pieces
3 medium-large beets or 2 large ones, cooked and cut in pieces
First, wash and clean your beets and cook them (whole if you have the time) for around 20-30 minutes until tender, but not yet too soft.
Then, when the beets are already cooking for like 15 minutes, put the bacon in a frying pan in batches and fry! Make sure it doesn't get too crispy, or you won't be able to wrap it around the salmon anymore.
Pat the salmon dry and wrap the cooked bacon around it (3 pieces per piece of salmon).
Cut the onions in rings or moons and fry them in the bacon grease.
When the onions are soft, add the bacon-wrapped salmon.
After a couple of minutes, add the diced, cooked beets and the diced bell pepper.
Stir and cook until the salmon is done, for about 5 minutes.
Season with salt and pepper, and enjoy!
