Apple Peeler for Veggie Noodles?
In the past, I've made "pasta" dishes with vegetable peelers, and used the long strips of various colorful veggies to make the noodles. Recently, I bought an apple peeler (not even out of the box yet!) for the same reason. Sure, spaghetti squash is amazing, but I like to get a little creative, sometimes!
Has anyone ever used an apple peeler to make vegetable pasta before? How well does it work, what are your favorite vegetables to use? What are your favorite "pasta" recipes?
I love using zucchini, carrots, and eggplant to make veg noodles. Sometimes, if I want something creamy, I'll use pureed, steamed cauliflower, a splash of milk/cream, butter and Italian spices to make an alfredo-like sauce, and add some Parmesan on top. I also enjoy a simple bolognese, too! I'd love to hear your feedback and tips!
