I'm intolerant, and I seem to be able to tolerate *small* amounts of gluten, although 98% of the time, I avoid it anyway.
Of course, I'm not dying without bread, but sourdough is more than just boring ass white bread. It has flavour!
Patski: perhaps try gluten free sourdough bread. Flavor, texture, and no negative health impact, yeah? Here in the US I buy Sammi's bakery sourdough millet bread, has only a few simple ingredients. Not certified GF but I don't eat it too often and I'm not celiac to the best of my knowledge.

I just wanted to come back to this thread and admit that I was sort of wrong. Maybe I CAN get by with eating a couple pieces of toast here and there, but it's clear to me that bread causes my allergies even in medium doses. All I had at Panera about 2 weeks ago was a roll, and after total sinus clearness forever, I woke up with sore throat and runny nose. I apologize for the bad advice. If you're allergic, just stay away.
