I hate to say it but that sounds like an absolutely horrid way to cream a red sauce.
I've put haddock in my Brazilian fish moqueca before:

I love haddock broiled with butter. Sooo gooood
Melt butter in a pan, add a few bay leaves until flavour comes out then remove. Add salted and peppered haddock and fry. About the only way I cook fish these days.
