Yum! I'm going to try cooking chicken this way.
We just made these last week except used bone-in breast and drumsticks because TJ doesn't sell skin-on thighs. Holy moly. So good. A splatter screen is handy if you don't want a big clean up :)
Add spinach leaves or silverbeet to the pan when the chicken is done and it soaks up all that awesome fat and tastes delicious.
My mouth was watering when I saw this. Now I know what I am making for dinner... My hubby does love chicken. What oil did you use?
I used about a tablespoon of coconut oil, just because it handles the high heat well. It probably isn't even necessary though if you have your cast-iron well seasoned, in which case everything just rolls right off.
