Can you share recipes of your favourite primal pancake meals - sweet and savoy appreciated!
I made this one recently and it came out really nice.
Coconut flour pancakes:
4 eggs, room temp preferably (I didn't mind this step, but I did let them sit out for a bit)
1/2 cup coconut flour
1 cup coconut milk
2 teaspoons vanilla extract
1 teaspoon honey (I didn't have this, ended up using real maple syrup, just cus I had nothing else and I did want them a little sweet)
1/2 teaspoon salt
1 teaspoon baking soda
whisk whole eggs for about 2 minutes until frothy. Add coconut milk, honey and vanilla to wet mix. Separately mix dry ingredients together. Bring both together and mix thoroughly, let it sit for about 10-20 mins to break up the fiber a bit, otherwise they may be too dry and clumpy. Fry up as you normally would, I used extra virgin coconut oil.
I also made a blueberry compote, one cup frozen blueberries, couple spoons of water, some table sugar (sorry paleo army =/) and a teaspoon of lime juice - simmered on low for like 8 mins until it's syrupy.
Thanks to the compote, we didn't use any maple syrup and only a bit of butter on them - it was a nice change. My instagram pic came out pretty nice, as well - always important.

Another quick and dirty one that I haven't tried yet but sounds like it would work nicely is just grabbing some bananas and eggs, blending or mashing those together and frying that up pancake style. Of course, feel free to add extra fruits like blueberries on top of it, but the "batter" would be made of bananas and eggs only. I've also seen people add almond butter to the batter.
1/2c almond flour, 1/4c nut butter (I prefer peanut butter & co's white chocolate wonderful), 1/4c egg whites
blend until well combined, pour on to oiled skillet and cook. Makes 4 silver dollar sized cakes
Quick & Easy Paleo Pancakes
Makes about 7 small pancakes
Ingredients:
2 eggs
½ cup unsweetened applesauce
½ cup nut butter (cashew/almond/macadamia, etc. – not peanut butter!)
¼ teaspoon cinnamon
¼ teaspoon vanilla extract
¼ cup gluten-free baking mix
Coconut oil
Instructions:
Mix all ingredients (except the coconut oil) in a bowl. Stir well, until you have a uniform batter. Next, use a bit of coconut oil to grease a pan/skillet. Pour batter into pan just like you would when making “normal” pancakes and cook over low/medium heat. Flip after about a minute, being careful not to burn them.
Topping ideas:
Unsweetened applesauce
Warm berries
100% pure maple syrup
Chopped apples & cinnamon
