Beet Kvaas question
I put up some beet kvaas on Oct 29th of this year. I put it in the coolest room in the house and promptly forgot about it (it was under a chair). While on my knees and elbows the other day, I turned my head and saw it.
How do I know if this has gone bad or is just very well fermented. At this point, I'm almost afraid to open it lest I've created some new beety life form. :)

If it tuned slimey it's gone bad. Toss it.
If it hasn't turned slimey/grown stuff then it might be vinegar. You could use it for making bone broths, I guess.
If you cut the beets on the small side, it may have started going the way of alcohol.
I say, if it looks/feels okay, do a small taste test near the sink.
