Any poultry is better when reheated in duck fat. But homemade mayo or aioli is good too.
Chop it up with some onion, peppers, and potatoes, and make turkey hash. Top with egg.
Tomato sauce + poultry + sausage + veggies = yummy soup/stew.
we only have a big ol' turkey for thanksgiving. Christmas is almost always ham!
can I suggest a TBA sammich? (turkey, bacon, avocado). If you're not into homemade gluten free bread, try it in a lettuce wrap or mashed up together.
Both legs are in the freezer for a later date. 2 tubs of meat are also in the freezer. There is enough meat in the fridge for another 2 meals and the carcass has been boiled for stock.
I am freezing a bunch of left overs. Mixing turkey into eggs for breakfasts and just made a GIANT batch of turkey bone broth. A big pot of gelatinous, mineral and nutrient rich goodness. Do it, you won't regret it. Turkey soup is the best.

I've just been eating the leftover turkey as-is. Cold or hot. We only bought and cooked a breast. I laid it on a pile of sweet Italian sausage. It came out really moist and delicious. I've been eating it with the sausage. A little sandwich with turkey for "bread" and sausage for the middle. Oh so good.
Turkey salad. Add egg/mayo/olive oil/avocado and some spices.
Salad, curry, soup, hot in sauces, cold in sauces. Always put some in the freezer, too.
