try goat, less lactose and a lot of dairy-intolerant people can have it

I know how you feel! Parmesan really makes me hurt bad. I'm looking forward to some of the suggestions.
I did an elimination diet and realized that cheese was the cause of my heartburn and GERD. I just gave up cheese (although I love it) because I don't intend to ingest anything that I already know is harming my body in some way. I gave up all grains for the same reason [symptoms showed me that I did not tolerate them well], although I can tolerate rice.
I eat no dairy except butter, and I feel great. Do I miss it? Only if I let myself dwell on it. So the answer is NO.
You could try that Dubliner cheese from Kerrygold. It's a natural hard cheese from grass fed cows in Ireland. Best value I've found is at Costco where a big brick costs about $13. Other than there it's pretty expensive for a small block. Dunno if this will work for you if you're cheese sensitive however. You can get the smaller blocks at Target grocery for about $5 to try it out first.
I figured out dairy gives me horrible acne. so just butter for me, cheese/milk/cream are out. But its okay, as said before, I just don't dwell on it. So I don't miss it :)
Try Emmentaler made of organic raw milk... it contains allmost no lactose and has beneficial bacteria because it's raw. Or goat cheese as mentioned.
All you can do is experiment. I'd try goat cheese. If you have a Trader Joes near you they have all sorts of goat cheeses that are pretty affordable. There are soy cheeses and hemp cheeses but just an FYI, they suck and aren't good for you. Nutritional yeast makes a "cheese sauce" but again, YMMV on if you enjoy that or not.
Otherwise, you have to decide what its worth to you to hurt. I've found I can tolerate the occasional wheat goodie (bloat and joint aches) once or twice a month. I'll pass on stuff like bread,muffins, cookies...but I had an amazing chocolate croissant the other day. The gluten free substitutes just don't cut it for me, so if I want the treat, I put up with the discomfort.

I agree with the goats or raw dairy - I found that switching to goats milks/raw dairy helped my son with his eczema, where normal dairy causes it to flare up. :D
