Personally, I would ditch the chewing gum entirely and permanently. It only keeps your tastebuds in sweet stuff mode. You want to re-educate them.
About dairy, it can be a very helpful part of a ketogenic diet as long as you go for the options that are higher in fat relative to milk solids. Some of my favorites are cream, cream cheese, mascarpone cheese, brie, camembert, and such. I don't drink just straight milk because the lactose to fat tradeoff just isn't good enough.
But any dairy product is ok as long as you are figuring those fat grams vs. carbs and coming out ahead for the day.
Another non dairy option is cultured coconut milk. Tastes like kefir only better. Yumm.
It's so frustrating. I can't find full fat cream without carrageenan in it, and it would be really helpful to have it. The cottage cheese is nice because it has a good amount of protein, so if I'm in a hurry and don't have time to cook meat, cottage cheese is right there ready to go. I never drink milk though. And I really just like the taste of the greek yogurt, but I could do without it.
I can't have coconut milk anymore. :( I found out that was the culprit of some major intestinal distress that I was having a few months ago, so pretty much all coconut is out unless it's a very small quantity.
have you looked for Kalona Supernatural? I think they sell it in CA. Check your local Whole Foods or Trader Joes if you have one. Strauss Creamery is another good one, and I know there's at least one commercial raw milk vendor in CA that I saw at Sprouts/Sunflower Market while in San Diego.

Google "Organic Pastures" since you are here in CA. They deliver.
Perhaps the cultured variety would be easier on your digestion. I know that there are a lot of people who can't tolerate regular dairy but do fine with fermented products such as yoghurt and kefir.

Paleobird will probably say "Aw, Bork, missed it by *that* much" after suggesting 2 awesome products, buuuuut... So Delicious makes a coconut milk kefir.
I think Lifeway does, too. That one might be a better option.
You could, of course, always order some kefir grains and make your own deliciousness :)

I don't do ketosis, BUT if chewing gum isn't setting off cravings for sweets, you should probably be fine. I didn't chew gum for a year or so, but I then realized that when I go to business meetings and events, it's a must. I've tried a few different natural brands of gum, and the Pur brand is by far the best -- it's almost indistinguishable from conventional gum taste-wise, and it doesn't lose flavor or become gritty. Highly recommended.

I live in Tracy, Northern Cali. Closest whole foods is San Ramon. I think there may be a TJ's closer though.
