I was wondering if anyone had a good recipe for a Faleo biscotti? I keep craving one, and figured I'd love to have a way to make it from time to time. It doesn't have to be a crescent, just crunchy and dunkable?

Arrowroot is a starchy tuber. I think you could probably substitute tapioca flour. It might change the consistency somewhat.
Yeah, after I got over the 'arrowroot' word, I did a quick search. IIRC I saw comparison of starches somewhere, so I will take a look at the proportions for tapioca or potato starch, to match the closest. Gonna make those one of these days when life is not worth living without carbs. :)
yes, super excellent recipe! there is another one out there that uses cocoa powder in place of the tapioca/arrowroot! NOM. i use those 2 flour interchangeably, by the way.

Arrowroot starch is a paleo-approved replacement for corn starch. You can use tapioca starch, arrowroot starch and potato starch all in place of corn starch in recipes 1:1. Tapioca starch is by far the cheapest. They sell it at Whole Foods for $3.99/bag. They carry all the rest as well, but the others are considerably more expensive. It's $7 or $8 for arrowroot and tapioca starch serves the exact same purpose.
Tapioca starch is super cheap at Superstore in the international foods aisle, Leida, so you should be able to get some there.
Yeah, I have tons of tapioca. :)
